Banana Walnut Muffins
This is the best muffins I have ever made (and I have made loads). They are light and somewhat healthy. It is the best use of your over-ripe bananas that no one would like to eat.

Cook time: 20 minutes
Total: 30 minutes
Ingredients: (makes 10 medium muffins)
Unsalted butter, 6 tbsp cut up to small pieces and room temperature
Light brown sugar, ⅔ cup
Banana, 2 whole
Egg, 1 at room temperature
Vanilla extract, 1 tsp
Self rising flour, 1 ½ cup
milk , 3 tsp
Walnut, 1 cup chopped
Method
Preheat the oven to 400°F while preparing the dough.
Line your cupcake cups with a liner or grease each one with melted butter/avocado oil.
Mix in the butter and sugar until it is mixed thoroughly.
Add the egg and vanilla extract into the batter. Beat it for at least 5 minutes or until the batter is no longer shiny.
Add in the flour and milk and mix just until they are incorporated. Make sure not to over-mix.
Fold in the walnuts and banana.
Spoon the batter evenly into each cup or liner, filling each to the top.
Bake for 20 minutes.
Let them cool down and enjoy.
