Pasta Salad

Prep Time: 2 Minutes. Cook Time: 15 Minute Total time: 17 Minutes

Ingredients (Serves 2)

  • Dry Pasta, 2 cups

  • Tahini sauce, 1/4 cup

  • Spice of Life Eggplant Tomato Sauce, half a jar

  • Cooked can of chickpeas, 1 cup

  • Red pepper flakes, 1/4 tsp

  • Salt to taste

  • Fresh mint, handful roughly chopped

Method

  1. Cook the pasta as instructed on the box.

  2. While the pasta is cooking, mix Tahini sauce, Eggplant Tomato sauce, red chili flakes in a big bowl.

  3. Taste the sauce and adjust the salt as you like.

  4. Drain the chickpeas and set aside.

  5. Drain the cooked pasta and run it under cold water to cool down.

  6. Transfer the cooked pasta to the big bowl with the mix sauces, and mix WELL.

  7. Add the chickpeas and some of the fresh mint.

  8. Transfer to the serving bowl and garnish with the rest of the mint.

  9. Serve immediately, or keep it in the fridge to serve later.
