traditional persian Eggplant Stew

Traditionally, Eggplant Tomato Sauce is served with chicken/lamb stew cutlets over saffron rice.

Cook Time: 10 minutes             Total Time: 12 minutes

 

 Ingredients (Serves 2)

●  Chicken/lamb stew cutlets, 8 oz

●  Olive oil, 1 tsp

●  Spice of Life Eggplant Tomato Sauce, 6 oz

Method

  1. Warm up olive oil in a medium size pot.

  2. Add the stew meat, brown both sides in about 5 minutes.

  3. Stir in Eggplant Tomato Sauce, lower the heat, and let it simmer for another 5 minutes or until the chicken/lamb is fully cooked.
