Persian Herb Fritata (Kuku Sabzi)

Kuku, Persian Fritata, comes in different varieties. Kuku sabzi is made of mixed fresh herbs and gives you a tasty burst of freshness with each bite is one of my favorites! My parents used to make this recipe for my siblings and me as a light dinner, served with yogurt, bread, and tomatoes.

Ingredients (Serves 2)

  • Fresh parsley, 1 bunch/2 oz

  • Fresh Cilantro, 1 bunch/2 oz

  • Fresh dill, 1 oz

  • Fresh chives, 1 oz

  • Garlic, 2 cloves

  • Dried Cranberries/Barberries (optional), 1 oz

  • Walnut, chopped 2 oz

  • Dried turmeric, 1/2 tsp

  • Eggs, 5

  • Salt, 1 tsp

  • Black Pepper, ground 1/2 tsp

  • Avocado oil, 2 tbsp

Method

  1. Transfer the fresh herbs to the food processor and chop.

  2. Add in the garlic cloves, turmeric, salt, pepper and eggs and mix on pulse.

  3. Mix in the chopped walnuts and the barberries (if you are using) with a spatula.

  4. Warm up the oil in a large nonstick pan.

  5. Transfer the batter to the pan making sure it is spread evenly.

  6. Turn the heat to medium.

  7. Cover the pan, and let it cook for about 7 minutes or until it is all the way cooked and you have a good crust(brownish) on the bottom.

  8. Flip the pan over a plate or a cutting board.

  9. Cut to pieces and serve immediately.
